Nicoise Salad


Ingredients:

1-cup arugula
1-cup spinach
1-cup romaine
1-roma tomato
1/8-cup sliced raw red onion
1/2 –cup frozen green beans (thawed)
1-hard-boiled egg sliced
½ cup roasted potatoes
1-T Kalamata olives (optional)
1-T capers (optional)
3oz Ahi tuna seared rare if unavailable use can tuna

Balsamic reduction
Olive oil
S&P

Method: In large bowl toss all ingredients. Serve.
