Quinoa with Dried Fruit, Green Onion, Almonds & Cilantro



Ingredients:

1 cup quinoa
2 cups water

½ cup raisins chopped
¼ cup dried cranberries chopped
1T candied ginger chopped
12 dried apricots thinly sliced
½ cup sliced almonds
1 Lemon juiced
¼ olive oil
1-T garlic powder
1-T onion powder
½ tsp Himalayan salt
Pepper
6-green onions thinly sliced

¼ cup chopped cilantro

Method: Add water and quinoa to sauce pan. Bring to a boil, stir then lower heat. Cover and simmer (same as if you’re making rice) until all water has been absorb and quinoa resembles thick sticky oatmeal. Remove from heat and add dried fruit and almonds, lemon juice, oil, green onions and seasoning. Adjust seasoning to taste. Allow quinoa to cool before adding cilantro (this will prevent cilantro from turning brown). Refrigerate. You can eat it cold or warm slightly in microwave.
