Roasted Vegetable Sandwich


Savory and delicious flavors that will ALMOST make your forget that there’s no meat.

Ingredients:
1-gluten-free bun sliced and toasted
1-portobello mushroom
1-slice roasted eggplant
2-pieces roasted zucchini/squash
1/8-cup caramelized onion
2-strips roasted peppers
4-whole sundried tomatoes cut in half
1oz-sliced mozzarella

Handful arugula

1-T pesto
1-T low fat mayo

Method: Stack roasted vegi’s on top of Portobello top with cheese and microwave till melted. Combine pesto and mayo spread assemble sandwich and top with arugula.
