Tom Yum Goong Broth (hot & soup Thai soup)
Easy to prepare and very satisfying. This soup has a spicy flavor profile that is lemony and fragrant. Adjust spice level if needed. During week 1, the soup is primairly a vegetable consommé. In weeks 2-3 you'll gradually add additional componets as your body begins to adjust to the cleanse.
Week-1
Ingredients:
2-cups low sodium chicken or vegetable broth
1 tablespoon Instant Tom Yum Goong Soup Paste1-tbsp cilantro chopped
1-green onion, finely chopped
1-carrot (use peeler to slice into ribbons)
1-small zucchini(use same method for carrot)
1/4 avocado-cubed
1 lime quartered
METHOD:
Prepare cilantro, carrots, zucchini, green onions and place in serving bowl. In saucepan, heat stock, add paste and bring to a boil. Pour soup over vegetables in serving bowl. Serve with lime wedges
Week-2
Prepare as in week 1 add the following to the serving bowl:
-1/4 cup edammame (raw soy beans)
-handfull of raw spinach
-1/4 cup enoki mushrooms
Week-3
Prepare as in week's1-2 add the following:
-handfull of cabbage
-1oz bean thread rice noodles (softened)
-Organic hardboiled egg sliced
