Ingredients:
1-thick sliced roasted eggplant
4 slices roasted zucchini
4 slices roasted peppers
3-4 whole basil leaves
1-tsp extra virgin olive oil
-Balsamic reduction
Method: Place mushroom on plate and layer with next 4 ingredients. Heat in microwave for approx. 1 min or until cheese has melted. Remove and finish layering with fresh basil leaves, tomato and top with dollop of pesto. Drizzle olive oil and balsamic reduction.
