Vegetable Chili


1-14oz Low sodium-Kidney Beans
1-140z low sodium Black beans
2-14oz Low sodium diced tomatoes
1-14oz Low sodium tomato sauce
2-cups Low sodium Chicken stock

2-carrots peeled and diced
1-red onion diced
4-celery stalks diced
6-Roma tomatoes diced

2-cups roasted vegi's
2 pkg low sodium “Lawry’s Chili Seasoning” mix
1-cup Tomatillo Salsa
1T cumin
1/4 cup chipotle chili puree

½ cup Chia seeds

Method: Pour first 3 ingredients in large sauce pan and heat over low flame. In skillet, sauté (using PAM) next 4 ingredients until tomatoes have softened and liquefied. Add sauté items to sauce pan and stir. Add remaining ingredients and simmer for approx. 20 minutes. Let cool. Add Chia seeds.
